I'm Manu Palacio. Twenty years on the floor. Thirty-plus restaurants opened or operated across NYC, Madrid, London, Ibiza, Hong Kong, Bangkok. I still walk every service. Cento and Quilombo are mine.

The After·Service is the publication I always wanted to read but couldn't find. Not a guide. Not a ranking. Not a sponsored list. A quarterly letter from one operator who pays at every table on this list and only writes about the rooms he walks back into.

This is Issue 01: Bangkok. 121 rooms across 8 neighborhoods, filtered by 14 occasions. The architecture supports more — themed lists, weekly itineraries, guest curators — but those are coming. For now, we lead with what's real.

Every issue follows the same discipline. I pay. No comped tables. No rankings. Occasions over scores. Cento and Quilombo never appear here. Conflict of interest. They live on this page only. The list is alive. Check the dateline.
